Pop’s Macho Nachos

 

 

 

 

 

I’m about to blow your mind here with this awesome nachos recipe. It’s delicious, mouth watering, easy to make, and…meat free. Yes, meatless nachos that are actually good. But don’t fret, although I’m going to show you how to make nachos without meat, it’s a recipe that’s still packed with protein so you don’t miss out.

What You Need:

  • 4 chopped green onions

  • 2 sliced and diced tomatoes

  • 2 full jalapenos sliced and chopped

  • A big bag of tortilla chips

  • 16 ounces or 1 can refried beans (beans, beans, the magical fruit!)

  • 16 ounces or 1 block of Monterey jack cheese (or more if you like ‘em cheesy)

  • 16 ounces or 1 block regular cheddar cheese

  • 8 ounces or 1 tub of sour cream

  • 12 ounces or 1 can of premade chili beans (or homemade, if you do that)

How to make it:

  1. Preheat the oven to 350 degrees.

  2. Layer half the bag of chips on the baking sheet or casserole dish.

  3. Heat up the beans in the microwave or on the stovetops and stir until creamy.

  4. Spread the warmed beans over the chip layer. The add layers of the veggies and chili topped with cheeses. And then repeat this layering process until you’re done.

  5. Toss in the oven and bake for about 10 minutes or until the cheese is nice and melty.

  6. Let cool slightly and serve!

Nom, nom, nom. Enjoy these on a Friday night with a side of guacamole and/or salsa dressed to impress. They’re so loaded with good stuff that it could be a full meal for you and your family any night of the week.
