Okay guys, don’t shy away. Seriously. Yes, it’s manly to smoke a rack of ribs on the back patio or throw a pizza in the oven. But you have not lived until you’ve eaten these homemade oatmeal cookies. I was bored one afternoon while my wife was working, the kids wanted cookies (as did Dad), but there were no delicious cookies in the house. I found a recipe online, modified it to be better because that’s what dads do, and created the best cookie dough recipe ever to exist throughout the face of humanity. Okay, maybe that’s a bit much. But really, it’s a great cookie. Try for yourself.
What You’ll Need:
1 cup of soft butter or margarine
1 cup sugar (the white kind!)
Another cup of sugar (the brown kind!)
2 medium sized eggs
1 teaspoon vanilla extract
2 cups of flour (white or whole wheat)
1 teaspoon of baking soda (that’s the one you keep in the fridge)
1 teaspoon of salt
1.5 teaspoons of cinnamon
3 cups of quick oats
How to Make It:
Take both sugars and toss in a bowl with the butter and begin to cream together until you get a nice consistency. Use a spoon.
Beat in the eggs one at a time, then finish with the vanilla. Set this bowl aside.
Next, mix the flour, baking soda, salt, and the cinnamon together in a different bowl.
Then, take the dry bowl and stir into the creamed mixture bowl, slowly!
Then, mix in your uncooked oats.
Here comes the part that makes this dough so good. You don’t spoon onto a baking sheet and cook right away. Oh, no. No, sir. Instead, you cover the bowl, and chill your amazing dough for about an hour in the fridge.
After you’ve waited your hour, pre-heat the oven to 375, roll the chilled dough into balls.
Place them onto a greased baking sheet, spacing about two inches apart.
Then, flatten the balls with a fork until they look like a cookie.
Toss in oven. Bake for 8 minutes.
Remove from oven and eat. And eat. And eat.
This Dad’s oatmeal cookie recipe is pretty much a staple to have in your tool belt. The real beauty of this recipe is that you can switch it up in so many ways. Add M&Ms, Smarties, chocolate chips, nuts, raisins, etc. at anytime. Heck, toss them all in and make Dad’s Monster Cookies.
